Ingredients

- Chopped Romaine
- Roasted Corn
- 1 avocado
- Pickled onions
- Pickled jalapeños
- Grated cheddar cheese
- Tortilla chips
- Lime wedges
- Chopped cilantro
For the Dressing:
- 1/2 cup Greek yogurt
- 1/2 cup sour cream
- 2 tbsp ranch seasoning
- Pickled jalapeños, to taste
- 1/4 cup chopped cilantro
- Pinch of salt and pepper
Instructions
- Prepare the tofu by heating oil in a pan over medium heat. Add the shallot with a pinch of salt and sauté until golden. Incorporate the garlic, bell pepper, and taco seasoning, cooking for a minute until fragrant. Stir in the tofu, coating well. If it appears dry, add a splash of water or a bit of salsa. Remove from heat and set aside.
- Make the dressing by blending all the ingredients in a food processor until smooth. Set aside.
