As I approached the final stages of my pregnancy and transitioned into early motherhood, I became quite passionate about breakfast preparation. Mornings can be overwhelming, and without some quick, nutritious options at hand, it's easy to overlook breakfast. Those familiar 10am hunger pangs? Not ideal.
So, if I don't have muffins, breakfast cookies, or baked oatmeal on hand, I genuinely feel stressed.
This recipe has truly changed my mornings. At the week's start, I whip up a batch of baked oatmeal featuring a delightful blend of banana, peanut butter, cashews, and cinnamon — and I finally feel like I've found my go-to healthy breakfast, prepped and ready in the fridge.

This dish is also perfect for weekend family breakfasts or sharing with friends. Fresh from the oven, it's hard to beat, but it's also fantastic reheated with a splash of milk (I prefer oat milk) in the microwave. I even add a sprinkle of coarse finishing salt on top — it's a must!
Those caramelized bananas are a game changer! You could easily swap them for other fruits like blueberries, which are a staple in my home. Cashews can also be replaced; chopped pecans or macadamia nuts work beautifully as well.

Ingredients
- 2 ripe bananas, sliced
- 2 cups old-fashioned oats
- 1/2 cup cashews, roughly chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups oat milk
- 1/4 cup maple syrup
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 2 tablespoons ground flax seed
- 1 tablespoon melted coconut oil
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 375°F. Grease a medium-sized baking dish and layer half of the banana slices at the bottom.
- In a large bowl, mix oats, cashews, cinnamon, baking powder, and salt. Layer this mixture over the banana slices.
- In the same bowl, whisk together oat milk, maple syrup, peanut butter, honey, flax seed, melted coconut oil, and vanilla extract. Pour this over the dry mixture in the baking dish and gently press down with a fork to ensure everything is evenly soaked. Top with the remaining banana slices.
- Bake uncovered for around 35 minutes. Enjoy right away or store in the fridge for up to a week.
