Reasons to Crave This Salad

  • Bright and Fresh Flavors: The dressing combines fresh orange zest and juice, with ginger adding a natural sweetness that makes it appealing even to picky eaters.
  • Quick and Easy: This meal is ready in less than 30 minutes, making weeknight cooking a breeze while still feeling special.
  • Nutrient-Rich: Loaded with healthy fats, vitamin C, antioxidants, and omega-3s, this dish will leave you feeling satisfied and energized.

Essential Ingredients

  • Salmon filets: Both fresh and sustainably sourced frozen salmon work well. Wild salmon is often more nutrient-dense, but I favor the taste of Atlantic salmon.
  • Arugula: It adds a peppery kick, though you can substitute spinach or mixed greens if you'd like.
  • Avocado: This ingredient offers creaminess and essential healthy fats.
  • Citrus fruits (grapefruit & oranges): These brighten the dish and counterbalance the richness of salmon.
  • Shallot & Mint: They provide a subtle bite and refreshing hint of mint that elevates the salad.
  • Marcona Almonds: While regular almonds can be used, marconas bring a unique flavor.

Perfecting Your Salmon

Broiling salmon is the easiest way to achieve perfectly cooked fish. Here's how to do it right:

  1. Distance is key: Keep the salmon about 10 inches from the broiler for even cooking without burning.
  2. Avoid overcooking: Broil until the salmon is just golden and caramelized; overcooking ruins the texture.
  3. For well-done salmon: Cut each filet in half; smaller pieces cook quicker.

Substitutions and Variations

  • Protein: This salad can also be made with grilled chicken, shrimp, or roasted chickpeas for a vegetarian twist.
  • Greens: Swap arugula with baby kale, spinach, or any salad mix you prefer.
  • Fruit: If grapefruit isn't appealing, consider blood oranges or mandarins for a colorful touch.

Serving Suggestions for Any Occasion

This salmon salad is incredibly adaptable, perfect for various spring occasions, whether a cozy weeknight or a festive gathering.

Casual gatherings: Present these stunning ingredients on a platter alongside a grain salad, cheeseboard, and a refreshing strawberry-rosé sangria for a delightful dinner party.

Weeknight meals: Pair with crusty whole-grain bread for a satisfying, balanced option.

Description

This broiled salmon salad, featuring citrus, avocado, and arugula, is simple enough for a weeknight yet adds vibrancy to your table!

Ingredients

  • 4 salmon filets
  • 2 small avocados
  • 1 grapefruit, peeled and sliced
  • 2 oranges, peeled and sliced
  • 6 cups arugula
  • 1 shallot, thinly sliced
  • 1/2 cup marcona almonds, chopped
  • 2 tablespoons mint, chopped
  • Kosher salt and freshly ground black pepper

For the Orange-Ginger Dressing:

  • Zest and juice of 1 orange
  • 2 tbsp rice vinegar
  • 1 garlic clove, peeled
  • 1 inch piece ginger, peeled
  • 1 tbsp honey
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the dressing: Blend all ingredients until smooth.
  2. Preheat your oven's broiler, adjusting the rack to about 10 inches from the heat. Arrange the salmon on a foil-lined baking sheet, skin-side down, and season with salt and pepper.
  3. Broil until the salmon is nearly cooked but not yet golden, approximately 3-4 minutes. Remove from the oven and brush the top and sides with the orange-ginger dressing.
  4. Return the salmon to the oven, broiling until caramelized on top, about 2-3 more minutes. Take out of the oven.
  5. In a serving bowl, combine arugula, grapefruit and orange segments, avocado chunks, shallot, almonds, and mint. Season with salt and pepper, then drizzle with dressing. Toss to combine, then serve on four plates.
  6. Top each plate with a salmon filet, adding extra dressing if desired. Enjoy!
