Carrot Turmeric Hummus: A Deliciously Healthy Snack Alternative
Ingredients
- 2 cups chopped carrots
- 1 garlic clove
- 1 teaspoon grated fresh turmeric
- 2 lemons
- 1/2 cup extra-virgin olive oil, plus more for drizzling
- Sea salt and freshly ground black pepper
- 2 tablespoons hulled, unsalted sunflower seeds, toasted
- 2 tablespoons sliced fresh mint leaves
- Sumac
- Vegetable crudités, for serving
Instructions
- Fill a large bowl with ice water.
- Bring a small saucepan of water to a boil.
- Add the carrots and cook until tender-crisp.
- Drain and immediately transfer to the ice water. Once cool, drain again.
- Place the carrots in the 7-Cup KitchenAid Food Processor. Add the garlic, turmeric, zest, juice of 1 lemon, and ¼ cup water. Blend until smooth.
- With the machine running, pour in the olive oil steadily. Season with salt and pepper.
- Transfer to a serving bowl, topping with sunflower seeds and mint leaves.
- Zest the remaining lemon over the top, drizzle with olive oil, and sprinkle with sumac.
