There's no universally accepted "perfect" cookie, as preferences vary. While my brother isn't a fan of the thick, Levain-style cookies, I adore their chewy, substantial texture. My dad goes for the classic soft chocolate chip variety, yet I favor thinner, chewier options. Flavors also vary: many enjoy traditional tastes, while I seek out exciting combinations. For me, these pistachio cookies embody the ideal cookie experience, and I hope they bring you the same happiness.

Pistachio flavor is trending, thanks in part to treats like the Dubai chocolate bar. Its subtle, earthy taste pairs beautifully with various ingredients, and its soft green hue is visually appealing. I aimed for a cookie that truly showcases pistachio in every aspect. These cookies not only highlight pistachio but also enhance it with a few additional ingredients. With a chewy texture, balanced sweetness, and vibrant flavor, they're simply delightful.

Essential Ingredients for Pistachio Cookies

This cookie recipe features a short list of ingredients, with a few extras to elevate the flavor.

Sugar. Both granulated and brown sugars contribute to the sweetness.

Olive oil. The unique taste of olive oil enhances these cookies. Choose a high-quality oil for the best results.

Orange. I experimented with and without orange zest, but the brightness it adds is crucial. It complements the other flavors perfectly.

Cardamom. A little bit of fresh cardamom enhances the pistachio flavor wonderfully.

Salt. Never skip salt in baked goods, especially in these cookies.

Vanilla. While optional, a hint of vanilla enhances the flavor. I particularly enjoy using powdered vanilla.

Egg. Just one egg is needed for this recipe.

All-purpose flour. This is the foundation of our cookies!

Pistachios. We also incorporate ground pistachios to ensure bites of flavor without large chunks.

Baking powder and soda. These leavening agents help the cookies rise.

Pistachio butter. You can easily make this at home or opt for a store-bought version.

Tips for Perfect Cookies:

I tested these cookies multiple times to find the best results.

  1. Mix the orange zest with the sugars before adding olive oil and eggs. Rubbing the zest into the sugars releases its essential oils and enhances flavor.
  2. Refrigerate the cookie dough. This step significantly improves flavor and texture, especially since we're using olive oil instead of butter. Chilling the dough enhances the rise and overall quality, so don't skip it!
  3. For added pistachio flavor, fold in ribbons of pistachio butter at the end instead of mixing it in completely.
  4. To make the cookies visually appealing, create a topping mixture of ground pistachios, demerara sugar, zest, and salt. This optional step adds a fun touch!
  5. Gently tap your baking sheet on the oven rack and counter after baking. This technique gives the cookies a lovely texture and helps them rise perfectly.
  6. If you want round cookies, use a cookie cutter or glass to reshape them right out of the oven.

Storing Your Pistachio Cookies:

After cooling, store the cookies in an airtight container at room temperature for a few days. For longer storage, freeze the dough in scoops until you're ready to bake.

To freeze, scoop the dough onto a lined baking sheet, chill in the fridge, then transfer to the freezer until solid. Once frozen, store the scoops in an airtight container or bag for quick, single-serve cookies. If baking from frozen, you may need to add a few extra minutes, so keep an eye on them.

Description

An easy pistachio cookie featuring orange zest and cardamom.

Ingredients

  • 1/2 cup granulated sugar (100g)
  • 1/2 cup brown sugar (90g)
  • Zest of 1/2 orange
  • 1/2 cup olive oil (4oz)
  • 1/2 tsp salt
  • 1/2 tsp ground cardamom
  • Splash of vanilla
  • 1 egg, room temperature
  • 150g flour (1 1/4 cup)
  • 1/2 cup finely ground pistachios (50g)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup pistachio butter

For the topping:

  • 1/4 cup finely ground pistachios
  • Zest of 1/2 orange
  • 1 tablespoon demerara sugar
  • pinch of salt

Instructions

  1. Start by preparing the cookie dough. In a large bowl, mix the granulated and brown sugars with the orange zest. Rub the zest into the sugars until fragrant and sandy. Add olive oil, salt, cardamom, and vanilla, and whisk until blended. Incorporate the egg and whisk until smooth.
  2. Add flour, ground pistachios, baking powder, and baking soda. Fold the mixture until just combined. Drizzle pistachio butter over the dough and gently fold it in, ensuring it remains visible. Chill in the fridge for at least 30 minutes.
  3. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  4. In a separate bowl, mix the topping ingredients.
  5. Using a cookie scoop, portion out dough, dip into the topping mix, and place on the baking sheet about 2 inches apart. Bake for 12-13 minutes, tapping the sheet on the oven rack at 8 and 10 minutes. Avoid overbaking! After removing from the oven, tap the sheet on the counter. Let the cookies cool for about five minutes before transferring to a wire rack. Enjoy!
