This year, I'm committed to truly enjoying this season. I want to soak in the autumn vibes I cherish, find moments to carve pumpkins, sip cider, and take evening strolls to appreciate the vibrant leaves. Most importantly, I aim to wrap up these hectic days with cozy nights at home, cooking alongside my sous-chef Phoebe and drawing inspiration from the best seasonal ingredients. This dish may look fancy enough for a dinner party, but it's surprisingly straightforward. When I buy salmon, I ask the fishmonger to remove the skin and bones from the fillets, making the prep a breeze. I simply place them on a parchment-lined sheet pan with my choice of veggies, some smashed garlic, and sweet orange slices that caramelize beautifully during roasting, elevating the dish's presentation.
I then season everything with Original Chili Seasoning, which combines chili pepper, cumin, garlic, onion, and salt into one mix. This means I don't need to hunt for five separate spices; I can just open the packet for perfect seasoning every time. We're talking about a five-minute prep time here!
Does anyone else dream of a magical clean-up fairy swooping in after dinner? Me too! Luckily, this cooking method is pretty close to that dream. Step 1: toss the parchment paper and throw it away. Step 2: rinse the sheet pan and toss the cutting board in the dishwasher. Easy!

Ingredients
- 5 salmon fillets, skin removed
- 1 head of broccoli
- 1 bunch of asparagus, trimmed
- 3 garlic cloves, peeled and smashed
- 1 large orange, sliced
- 1 large blood orange, sliced
- Original Chili Seasoning
Instructions
- Preheat your oven to 400°F. On a parchment-lined baking sheet, arrange the salmon fillets in the center. Sprinkle with 1/4 of the Original Chili Seasoning.
- Coat the broccoli, asparagus, and garlic cloves in olive oil and the remaining 1/4 of the chili seasoning. Spread them around the salmon. Add the orange slices among the veggies.
- Bake for 20-25 minutes, until the salmon is cooked through and veggies are tender.
- Serve and enjoy!
