Ingredients

For the banana bread:

  • 9 eggs
  • 5 tablespoons yogurt
  • 5 cups milk
  • 450 grams melted butter
  • 600 grams sugar
  • 1.5 kilograms gluten-free flour
  • 6 teaspoons baking soda
  • 11 ripe bananas
  • pinch of Maldon salt
  • 5 cups crushed walnuts (plus extra for topping), desiccated coconut for garnish

For the espresso mascarpone:

  • 1 tub mascarpone cheese, chilled
  • 12 shots of espresso
  • 1 cup powdered sugar

For serving:

  • Puffed buckwheat
  • Honey

Instructions

  1. In a bowl, whisk together the eggs, yogurt, and milk. Incorporate the sugar and melted butter.
  2. Continue whisking until the sugar dissolves. Stir in the flour, baking soda, salt, and bananas.
  3. Mix until the flour is fully incorporated. Gently fold in the walnuts.
  4. Grease the bread pans. Pour the batter evenly and sprinkle with crushed walnuts and desiccated coconut.
  5. Bake for about 1 hour and 20 minutes or until a cake tester comes out clean.
  6. Using a mixer, gradually whip the mascarpone until soft.
  7. Add espresso and powdered sugar, ensuring not to over-whip. The mascarpone should remain cold throughout.

To serve:

  1. Slice the banana bread and place on a plate. Top with espresso mascarpone, puffed buckwheat, and honey.
