This easy grain-free granola recipe is made every Sunday and stored in the freezer to enjoy throughout the week on yogurt, fruit, or simply by the handful.
Ingredients
- 3 cups Coconut Flakes cereal (look for one with organic coconut meat)
- 1 1/2 cups assorted seeds—I use sunflower, pumpkin, and hemp seeds
- 1 1/2 cups raw nuts—I prefer slivered almonds and chopped walnuts
- 1 egg white
- 1 small container of applesauce
- 1/2 teaspoon salt
- Cinnamon, to taste
Instructions
- Preheat your oven to 300 degrees.
- In a small bowl, combine egg white, applesauce, salt, and cinnamon.
- Spread the coconut flakes, seeds, and nuts on a parchment-lined baking sheet. Pour the egg white mixture over them, and mix until everything is coated, then create an even layer.
- Bake for 20-30 minutes until starting to brown. Stir and flip the granola, then bake for an additional 15 minutes until golden.
- Allow to cool; the granola will crisp up further as it cools.
Notes
- Feel free to substitute any of the nuts or seeds with equal amounts—I've had great success with flaxseeds, chia seeds, sesame seeds, pecans, and pistachios!
