Ingredients

  • 2 tablespoons natural peanut butter
  • 2 generous tablespoons quick oats
  • 1 teaspoon powdered sugar
  • 1/4 teaspoon pure vanilla extract
  • 1 tablespoon semisweet chocolate chips
  • Flaky sea salt, for topping (optional)

Instructions

  1. In a small bowl, mix the peanut butter, oats, sugar, and vanilla until well blended. With your hands, form the mixture into a disk about 2 1/2 inches wide (6 cm) and 1/2 inch thick (12 mm). Use a fork to imprint the top. Chill it on a parchment-lined plate in the freezer for about 5 minutes until firm.
  2. Once chilled, melt the chocolate in short bursts of 15 seconds until smooth. Spread half of the cold cookie with chocolate, and sprinkle with flaky sea salt if desired. If the chocolate doesn't set, place it back in the freezer for a minute or two.
