This strawberries & cream pavlova delivers lightness, airiness, and fresh berries, making it the perfect dessert for summer celebrations.


Ingredients

  • 1 teaspoon lemon juice
  • 1 1/2 teaspoons cornstarch
  • 6 egg whites
  • 1 1/3 cups granulated sugar
  • 2 teaspoons vanilla extract
  • Pinch of kosher salt
  • For topping: whipped cream, strawberries, and optional cherries & raspberries. Edible flowers are a lovely touch!

Instructions

  • Preheat your oven to 200°F and adjust the rack to the lower third.
  • On a parchment-lined baking sheet, trace an 8” or 9” cake pan to create a circle.
  • In a stand mixer with the whisk attachment, beat the egg whites on low until foamy; then increase the speed to medium and continue until soft peaks form. Gradually add in the sugar while mixing on medium speed.
  • Meanwhile, mix the lemon juice and cornstarch in a small bowl. Once the egg whites reach stiff peaks, add the lemon juice, cornstarch mixture, vanilla, and salt.
  • Mix on high for 5 minutes until the meringue is stiff and glossy.
  • Transfer the meringue onto the parchment and form it into a tall circle using the stencil. Create a slight dip in the center and shape the sides into beautiful swirls.
  • Bake for 1 hour and 30 minutes, then turn off the heat and crack the oven door to keep it ajar (using a wooden spoon). Let the meringue sit for another hour before removing it to cool completely on a wire rack.
  • Once cooled, place the meringue on a serving platter, adorn it with whipped cream and berries, and enjoy!
