This protein-rich grain-free oatmeal is simple to make and fully customizable.
Ingredients
- 1 cup walnuts
- 1/2 cup sunflower seeds
- 4 tablespoons chia seeds
- 3 teaspoons ground flax seeds
- 1/3 cup shredded coconut
- 1/4 cup coconut flour
- 2 teaspoons vanilla extract
- 2 tablespoons maple syrup
- 2 teaspoons cinnamon
- 3 cups coconut milk
Instructions
- Blend nuts in a processor until they resemble coarse sand.
- Combine in a bowl with chia seeds, flax seeds, coconut, vanilla, maple syrup, coconut flour, cinnamon, and coconut milk. Stir until mixed.
- Cover and refrigerate for an hour. Stir again to ensure seeds aren't stuck.
- Let sit overnight. Warm if desired, then add toppings and enjoy!
