Description

This protein-rich grain-free oatmeal is simple to make and fully customizable.


Ingredients

  • 1 cup walnuts
  • 1/2 cup sunflower seeds
  • 4 tablespoons chia seeds
  • 3 teaspoons ground flax seeds
  • 1/3 cup shredded coconut
  • 1/4 cup coconut flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 2 teaspoons cinnamon
  • 3 cups coconut milk

Instructions

  1. Blend nuts in a processor until they resemble coarse sand.
  2. Combine in a bowl with chia seeds, flax seeds, coconut, vanilla, maple syrup, coconut flour, cinnamon, and coconut milk. Stir until mixed.
  3. Cover and refrigerate for an hour. Stir again to ensure seeds aren't stuck.
  4. Let sit overnight. Warm if desired, then add toppings and enjoy!
