What You'll Need

  • 8 ears of sweet corn
  • 1 large diced Haas avocado
  • 1 diced red bell pepper
  • 1 bunch of chopped chives
  • 1 bunch of chopped dill
  • 1 chopped jalapeño (optional)
  • Juice and zest from 1 lime
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Preparation Steps

  1. Blanch the corn in a large pot of boiling salted water for 3 minutes, then transfer to an ice bath to cool quickly.
  2. Once cooled, carefully cut the kernels off the cobs and place them in a mixing bowl. Add in the avocado, red pepper, chives, jalapeño, and dill.
  3. Incorporate the lime zest and juice along with the olive oil. Mix well and season with salt and pepper to taste.
