- 8 ears of sweet corn
- 1 large diced Haas avocado
- 1 diced red bell pepper
- 1 bunch of chopped chives
- 1 bunch of chopped dill
- 1 chopped jalapeño (optional)
- Juice and zest from 1 lime
- 3 tablespoons of olive oil
- Salt and pepper to taste
Preparation Steps
- Blanch the corn in a large pot of boiling salted water for 3 minutes, then transfer to an ice bath to cool quickly.
- Once cooled, carefully cut the kernels off the cobs and place them in a mixing bowl. Add in the avocado, red pepper, chives, jalapeño, and dill.
- Incorporate the lime zest and juice along with the olive oil. Mix well and season with salt and pepper to taste.
