One aspect I adore about the Mediterranean Diet is that it doesn't eliminate entire food groups. As a food enthusiast, I appreciate enjoying life while maintaining my health. Pasta deserves to be cherished! It can be enjoyed in moderation and serves as a blank canvas for incorporating vibrant, healthy, seasonal ingredients.

Garlic Shrimp Spaghetti: A Refreshing Summer Pasta Delight.
Ingredients
- 1 box Whole Grain Spaghetti
- 1/4 cup extra virgin olive oil, divided
- 4 cloves chopped garlic
- 12 ounces medium shrimp, shelled and deveined
- 1 cup asparagus, sliced on the diagonal
- 1 cup halved cherry tomatoes
- 4 green onions, sliced into long ribbons
- Kosher salt and freshly ground black pepper
- 1/4 cup grated Parmigiano Reggiano
- 1/4 cup fresh basil
Instructions
- Cook spaghetti one minute less than package directions. Drain, reserving 1/2 cup pasta water.
- In a large skillet over medium heat, heat 2 tablespoons olive oil. Add chopped garlic and cook until softened.
- Increase heat to medium-high. Add shrimp, asparagus, tomatoes, and reserved pasta water; cook, stirring often until shrimp are cooked through and vegetables are tender.
