Description

This crunchy pumpkin spice granola is a delightful make-ahead option for your fall mornings. Loaded with nuts, seeds, and a hint of maple syrup, it's grain-free, naturally sweet, and incredibly versatile.

Ingredients

  • 1 1/2 cups seeds: A mix of pumpkin, sunflower, and hemp seeds works best
  • 1–2 cups nuts: Slivered almonds and chopped pecans are my favorites
  • 1/2 cup unsweetened coconut flakes
  • 1 egg white
  • 2/3 cup pumpkin puree
  • 1/3 cup maple syrup
  • 1/2 teaspoon cinnamon
  • pinch of kosher salt
  • cooking spray

Instructions

  1. Preheat your oven to 300°F.
  2. Combine the nuts, seeds, and coconut in a mixing bowl.
  3. In another bowl, whisk together the egg white, pumpkin, maple syrup, cinnamon, and salt. Pour this over the nut mixture and stir until everything is coated.
  4. Spray a parchment-lined baking sheet with cooking spray. Spread the granola evenly, pressing it down to ensure it's compact.
  5. Bake for around 30 minutes, flipping halfway. Keep an eye on it; you're aiming for a golden brown color and a crunchy texture.
  6. Once done, let it cool completely; it will crisp up as it cools.
  7. Serve with yogurt, chia pudding, or milk. For maximum crunchiness, store it in the freezer; it'll last up to a month.
