Ingredients

For the spicy cucumber-orange salsa

  • 3 Persian cucumbers, diced
  • 1 small bunch of dill, chopped (1/2 to 3/4 cup)
  • 2 or 3 garlic scapes, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon avocado oil
  • 3 teaspoons white wine vinegar
  • 2 teaspoons fish sauce
  • Half a jalapeño, thinly sliced (remove seeds for less spice)
  • Zest from 1 orange
  • Kosher salt and freshly ground black pepper, to taste

For the roasted salmon

  • Extra-virgin olive oil
  • 2 pounds wild sockeye or coho salmon fillet
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup fresh cilantro leaves (flowers are a bonus) for garnish
  • Flake salt, for finishing

Instructions

For the spicy cucumber-orange salsa

  1. In a medium bowl, mix together cucumbers, dill, scapes, olive oil, avocado oil, vinegar, fish sauce, jalapeño, and orange zest.
  2. Toss everything to combine, then season with salt and pepper to taste. Set aside.

For the roasted salmon

  1. Preheat the oven to 400°F and lightly grease a sheet pan with olive oil. Place the salmon skin side down on the pan.
  2. Drizzle with more olive oil, then season generously with salt and pepper.
  3. Let the salmon come to room temperature while the oven heats for even cooking.
  4. Roast the salmon until the top is opaque and the center remains slightly translucent, about 8 to 10 minutes. Different thicknesses will yield varying doneness, catering to all preferences.
  5. Transfer the salmon to a serving platter and top with the salsa.
