Preparing This Pasta Salad

This recipe is perfect for making ahead of time. Pasta salads often taste even better the next day as the flavors meld together. While it's great to enjoy right after preparation, prepping it in advance enhances the taste.

To start, combine the dressing ingredients in the bottom of a large bowl: the oil from the sun-dried tomatoes, lemon juice, honey, salt, and pepper. Mix in the capers and chopped tomatoes.   • Juice of 1 lemon
  • 2 – 3 tablespoons honey
  • Big pinch of salt and pepper
  • 1/4 cup sun-dried tomatoes, finely chopped

  2. Cook the pasta according to package directions. Drain, then while warm, add to the dressing. Stir to combine, allowing to cool slightly before adding the remaining ingredients. Refrigerate for an hour or overnight if preparing ahead. Enjoy!
