Along with my go-to summer favorites like pasta al limone and grain salads, I adore recipes that showcase classic Mexican flavors. The spicier, the better! That's why these sheet pan chicken fajitas are a repeat hit in my kitchen.

The secret to these fajitas lies in the seasoning. They feature boneless, skinless chicken breasts or tenderloins, bell peppers, and onions, along with a generous sprinkle of taco seasoning to enhance the flavor. A good quality store-bought spice blend saves time while delivering great taste.

Healthy Chicken Fajitas Tips
Tex-Mex often gets a bad reputation for being heavy, but these chicken fajitas show that it can be loaded with veggies and protein.
- Base choice. Opt for corn tortillas to keep it gluten-free, or create a delightful fajita salad with shredded lettuce and pico de gallo.
- Cutting down on grease. Baking these on a sheet pan means you’ll use less oil than cooking in a skillet. Just toss them in a bit of olive oil before roasting.
- Fresh toppings. Add more veggies like guacamole, pico de gallo, and cilantro. A dollop of sour cream at the end adds a nice finish.

Crafting Five-Ingredient Chicken Fajitas
When I say “five ingredients,” I’m skipping pantry staples like olive oil, salt, and pepper, and toppings are optional. Got it?
If you’re entertaining, set up a station with fillings and toppings alongside warm, charred tortillas. Summer dining is served!

Description
These Sheet Pan Chicken Fajitas only require five ingredients and are destined to become your weeknight favorite.
Ingredients
- 1 pound skinless boneless chicken breasts or tenderloins, cut into 2-inch pieces
- 1/4 cup olive oil, plus 2 tablespoons (divided)
- Zest and juice of 3 limes
- 2 tablespoons taco seasoning or chili powder (divided)
- Kosher salt and freshly ground black pepper
- 5 mixed peppers of your choice (bell peppers, poblanos, etc.) and 1 onion
Instructions
- Preheat the oven to 425°F.
- In a shallow dish, mix ¼ cup olive oil, lime juice and zest, 1 tablespoon taco seasoning, 1 teaspoon kosher salt, and pepper. Whisk, then add chicken. Let it marinate while you prep the vegetables.
- Halve the peppers lengthwise, remove stems and seeds, and slice into 1/2-inch pieces. Halve the onion and slice it into 1/4-inch pieces.
- On a sheet pan, combine peppers and onion with the remaining 2 tablespoons of oil, 1 tablespoon taco seasoning, and a pinch of salt and pepper. Push the veggies to one side of the pan.
- Add the chicken to the other side, leaving excess marinade behind. Roast until the chicken is cooked through and the peppers are tender, approximately 15 minutes. Increase the heat to broil and broil until charred, about 5 minutes.
- Char the tortillas over a gas flame using tongs for about 1 minute per side. Keep warm in a tortilla warmer or a large ziplock bag.
- Serve the chicken and vegetables with tortillas, guacamole, pico de gallo, sour cream, and cilantro. A margarita pairs wonderfully! Enjoy!
