Ingredients

For the dressing:

  • 2 – 3 tbsp olive oil
  • 3 – 4 tbsp tahini
  • 1/2 – 1 tbsp miso
  • 2 tbsp capers, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 – 3 tbsp champagne vinegar
  • 2 – 3 tbsp honey
  • Big pinch of black pepper and salt

For the salad:

  • 2 heads of broccoli
  • 3 – 4 large cloves of garlic, thinly sliced
  • 1/2 cup panko breadcrumbs
  • Fresh grated parmesan
  • Fresh herbs of choice: chives, dill, etc.

Instructions

  1. Make the dressing. Combine all ingredients in a bowl and whisk until smooth. Adjust flavors as needed. Store in an airtight container for up to a week.
  2. Prepare the broccoli. Destem it, peel the outer layer from the stems, and slice them thinly with a mandolin. Place one head of sliced broccoli on a baking sheet, drizzle with olive oil and salt, then roast at 400°F for 15 – 20 minutes until golden brown. Set aside.
  3. Create crispy garlic and breadcrumbs. Heat 2 tbsp of olive oil in a pan. Add sliced garlic and cook until golden brown, stirring to prevent burning. Remove and drain on paper towels, then add breadcrumbs to the same pan and cook until golden.
  4. Assemble the salad. Mix fresh and roasted broccoli in a large bowl, add desired dressing, and toss. Top with grated Parmesan, garlic, breadcrumbs, fresh herbs, black pepper, and flaky salt. Enjoy!
