Units Scale- 1 small sweet potato for each person
- handful of arugula
- dried cranberries
- roasted pumpkin seeds
- crumbled goat cheese
- 1/2 cup olive oil
- 1 small bunch of fresh sage, stems removed
- sage brown butter (see below)
- salt and pepper to taste
For the sage brown butter:
- 1 stick butter
- 2 tablespoons chopped sage
- salt and pepper to taste
Directions
- Heat the oven to 400 degrees. Individually wrap each sweet potato in foil and arrange them on a baking sheet. Bake for 1 to 1.5 hours; the longer they cook, the sweeter and more tender they will become.
- About 20 minutes before the sweet potatoes finish baking, prepare the fried sage: In a small saucepan over medium-high heat, warm the olive oil. Test the oil by adding a drop of water; if it sizzles, it's ready. Add the sage leaves to the oil and fry for 15 seconds. Use a slotted spoon to transfer the leaves to a paper towel-lined plate to drain. Set aside.
- Make the sage brown butter (see below).
- Once the sweet potatoes are done, let them cool for five minutes. Unwrap them and cut open the tops. Fill generously with arugula, goat cheese, and dried cranberries. Drizzle with sage brown butter, and top with fried sage leaves and pumpkin seeds for decoration.
For the sage brown butter:
- In a small saucepan, melt the stick of butter. Add the sage and continue cooking until the butter begins to brown. Remove from heat and set aside.

I need to switch to sweet spuds (as we call them in the UK) since I keep hearing positive things about their health benefits. Thanks for the recipe. ?

I'm not a huge fan of sweet potatoes, but these look really good! Stuffing them might make me like them more, so I'll have to try this recipe!

This sounds wonderful! However, I've tried many goat cheese brands and can't stand the taste. Is there another cheese you recommend?

Have you considered FETA cheese? It's a bit tangy and pairs well with the sweetness of sweet potatoes.
