  • 2 - 3 tbsp ghee or oil
  • 1 sweet yellow onion, about 2 cups finely chopped
  • A pinch of salt
  • 1 clove garlic, minced
  • 1 tsp freshly grated ginger
  • 1 jalapeño, seeded and minced
  • Heaping 1/4 tsp mustard seeds
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1 bay leaf
  • 2 Granny Smith apples, peeled and finely chopped
  • 2 gala apples, peeled and finely chopped
  • 4 tbsp granulated sugar
  • 1 tbsp honey
  • 1 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup apple cider vinegar
  • 2 tbsp water

Instructions

  1. In a Dutch oven, heat the ghee over medium heat.
  2. Add the onions with a pinch of salt and cook for about 5 minutes, stirring occasionally until they become translucent.
  3. Stir in the garlic, ginger, jalapeño, and spices, allowing them to cook together for another 5 minutes while you prepare the apples.
  4. Peel and chop the apples into small pieces. Add them to the pot along with sugar, honey, more salt, pepper, apple cider vinegar, and water. Stir well.
  5. Reduce heat to low-medium and let the chutney simmer for about 45-50 minutes, stirring occasionally to prevent sticking.
  6. It's ready when the apples and onions have softened and there's no liquid left.
  7. Remove from heat and let cool. Adjust seasoning if necessary.
  8. Store in the refrigerator until you're ready to use. Enjoy!
