While I enjoy crafting extravagant desserts, there's something to be said for the beauty of simplicity. Most of the time, easy recipes hit the spot perfectly.
Let's face it, life can get hectic. Between playdates, work commitments, and the occasional yoga session, it's easy to take shortcuts with dessert. Often, I find myself grabbing a handful of chocolate chips or a scoop of ice cream. But sometimes, even simple treats can feel special. Today, I'm excited to show you how simple and delightful can go hand in hand.

These homemade s'mores are a breeze to whip up, whether you're entertaining a crowd or enjoying a quiet night. Plus, any leftover ingredients can be stored for a month or longer, making them much easier to manage than a whole cake. Their customizable nature adds a fun element for both adults and kids, making them a fantastic dessert option.

Feel free to keep it classic or get creative! For a touch of gourmet, invest in quality chocolate. If you enjoy dark chocolate, go for the darkest you can find. It transforms the typical sweetness of s'mores into a rich, sophisticated flavor. The combinations are endless, so let your imagination run wild!

Here are some of my favorite combinations:
- Milk chocolate with almonds, dulce de leche, sea salt, and toasted coconut (think Samoas Girl Scout Cookies in s'mores form!)
- White chocolate with lemon curd and pistachios
- Dark chocolate, peanut butter, and a sprinkle of rainbow sprinkles
- Extra dark chocolate paired with raspberry jam and toasted almonds

Happy indulging!

Ingredients
Graham cracker squares
Large marshmallows
Quality chocolate (extra dark, dark with almonds, white)
Toasted nuts (slivered almonds, pistachios)
Nut butters (peanut, almond)
Fruit spreads (raspberry jam, lemon curd)
Dulce de leche or caramel sauce
Toasted coconut
Rainbow sprinkles
Honey
Directions
Preheat your oven to 350°F. Adjust the oven racks so that one is in the middle and another close to the broiler.
Line a baking sheet with graham cracker squares, fitting up to 16 squares comfortably. No need to worry about spacing.
Place a square of chocolate on each graham cracker, then add a marshmallow on top.
Put the baking sheet on the middle rack and bake for 5-6 minutes until the marshmallows are melted and slightly golden. For a more toasted finish, move to the higher rack and broil for 30 seconds to 1 minute, watching closely to avoid burning.
To assemble, spread your chosen topping on one graham cracker half, sprinkle with desired toppings, and then sandwich with the other half. Enjoy!

These look incredibly tempting! But I can't help but wonder about the calorie count…
