Just a few years back, I found myself firmly in the anti-okra camp. That slimy texture was simply too much for me.     I've never tried okra! Coming from Canada and now in NYC, it wasn't common for me. I often skip over it on menus, but these recipes look tempting. Can't wait to try!

    Okra is fantastic! We enjoy it in gumbo here in South Louisiana too. If you're new to it, I agree with Chanel — start with fried okra. My dad has an easy recipe that's delicious: simply simmer fresh or frozen chopped okra with a can of Rotel. Such a quick side dish!

    I've heard that baking it before cooking can help reduce the slimy texture, but I haven't tried that method yet!

    Okra's amazing, as long as you avoid the older, tougher ones. It works wonders in soups and, guilty as charged, fried.

    Haha, I used to despise okra as a kid — the hairy exterior and slimy interior made it seem like I was munching on tiny green monsters. But I've come to appreciate it now! My go-to is pairing it with chili, ensuring it's not overcooked. I still prefer broccoli and other greens, but okra isn't bad at all. Thanks for sharing this great recipe collection!

    I'm a recent okra enthusiast as well! I used to shy away from it for the same reasons you mentioned (the slime), until my husband cooked bhindi masala and masala-stuffed okra. So delicious! Now I'm eager to try all these recipes — especially the grilled one with curry-lime dressing!

    In the Middle East, we cook okra with tomato paste, garlic, coriander, and a touch of lemon juice — it's fantastic! You should give it a try!
