Ingredients

  • 1 large sweet potato, 315g, microwaved and cooled
  • 1/3 cup panko breadcrumbs
  • 1/2 yellow onion, chopped
  • 1/2 teaspoon cumin seeds, freshly ground or 1/2 tsp ground cumin
  • 1/2 teaspoon coriander seeds, freshly ground or 1/2 tsp ground coriander
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt
  • 1 can of chickpeas, drained and rinsed
  • juice of 1/2 lemon

Instructions

  1. Microwave the sweet potato using the potato setting until fork tender. Peel and mash it in a large bowl. It doesn't need to be perfectly smooth. Let it cool while you prepare the other ingredients. (You can also bake it if preferred, but the microwave is quicker.)
  2. In a large skillet, heat a splash of oil and toast the breadcrumbs over medium heat until golden brown. Stir frequently to prevent burning. Once toasted, add them to the bowl with the sweet potatoes.
  3. Add 2 tablespoons of oil to the skillet and sauté the onions with the spices until lightly golden and fragrant. Remove from heat and let cool.
  4. In a food processor, combine the chickpeas and cooled onion mixture. Pulse until chunky, scraping down the sides as needed. If using a smaller processor, do this in two batches. Combine this mix with the sweet potatoes and breadcrumbs in the bowl.
  5. Mix everything together until it forms a cohesive texture. Add lemon juice and combine. The mixture should be moist but not sticky; add a tablespoon of water only if necessary.
  6. Shape about 1/2 cup of mixture into patties, slightly smaller than your palm and not too thick.
  7. Place formed patties on a parchment-lined tray or plate and chill in the fridge for at least an hour.
  8. For stovetop cooking, heat a generous amount of oil in the skillet over medium heat. Cook the patties until golden brown on each side. Ensure the bottom is golden before flipping to avoid sticking.
  9. For oven cooking, drizzle patties with oil and bake at 400°F for about 20 minutes on each side until golden brown.
