Who says a cleanse can't include pizza?
This dish uses a store-bought cauliflower crust, turning it into a pizza so tasty you might want to eat it all.

But let's keep that a secret.
Here are a few highlights of this recipe that I love:
1. The pesto. Making traditional pesto can seem daunting, but this version is simple. Just blend all the ingredients, and use any soft herbs you have for a tasty result.
2. The tomatoes. Slicing tomatoes, mixing them with fresh garlic, and letting them sit for a few minutes infuses them with incredible flavor.
3. The speed. Cooking the cauliflower crust takes only 8-10 minutes, and since goat cheese melts quickly, the whole meal is ready in about 15 minutes.

Ingredients
For the “Any Herb Pesto”:
- 2 cups flat-leaf parsley (or mint, or cilantro)
- 1/2 cup basil
- 2 garlic cloves
- 2 tablespoons pumpkin or sunflower seeds
- 1/2 cup toasted almonds
- juice of one lemon
- 1/2 teaspoon kosher salt
- 1/4 cup olive oil (or a little extra)
For the pizza:
- 1 premade cauliflower crust
- 1 cup cherry tomatoes, halved
- 1 cup crumbled goat cheese
- 2 cups arugula
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
Instructions
- Preheat your oven to 425 degrees. Remove the pizza crust from its packaging and lay it on a baking sheet lined with parchment paper.
- Combine all pesto ingredients in a blender and mix until creamy, adding more olive oil or hot water if necessary.
- Spread a layer of pesto on the crust with a large spoon, leaving about an inch around the edge.
- Top the pesto with cherry tomatoes and sprinkle goat cheese over them.
- Bake for 8-10 minutes, or until the crust is golden. If you prefer browned goat cheese, turn on the broiler after baking, but watch it closely to prevent burning.
- While the pizza bakes, mix balsamic vinegar and honey together. Set aside.
- Take the pizza out of the oven, add arugula on top, and drizzle with the balsamic mixture. Season with flaky salt, slice, and enjoy!
