After dinner, we often indulge in a sweet treat, whether it's a full dessert or just a small piece of chocolate. In a pinch, I always have berries and whipped cream ready for a quick dessert that everyone loves.

For a recent spring brunch with friends, I aimed for a dessert that was simple yet looked impressive for my favorite ladies.

While brainstorming pretty, easy desserts, I recalled a classic English treat called a “fool,” which involves macerating fruit and folding it into cream.

A quick search confirmed that was indeed the essence of a fool. Perhaps that's how it got its name?

Besides being delicious—who doesn't love berries and cream?—these fools are visually stunning. You can serve it in a large bowl for a family-style experience, but for this elegant gathering, I opted for individual dessert glasses. To add some texture, I included crushed amaretti cookies between layers and on top. Gingersnaps or graham crackers would also work well.

It doesn’t get much simpler! You can also try this with strawberries, blueberries, or peaches, making it a versatile dessert for the warmer months. Check out the recipe below.

Ingredients

  • 2 pints raspberries, rinsed
  • 1 tablespoon sugar, divided
  • 1/2 teaspoon vanilla extract
  • 1 cup chilled heavy whipping cream
  • 1 cup crushed amaretti cookies

Instructions

  1. In a small bowl, place one pint of raspberries and sprinkle with 2 teaspoons of sugar. Stir gently and let macerate for at least 30 minutes, or refrigerate for a few hours.
  2. Using an electric mixer, beat the cream in a large bowl on medium-high until soft peaks form. Add the remaining teaspoon of sugar and vanilla, mixing until just combined.
  3. In four dessert glasses, add a dollop of cream and top with a spoonful of macerated raspberries, including the juice. Gently fold them together. Add a sprinkle of crushed amaretti. Repeat the layering, finishing with amaretti and a couple of fresh raspberries on top. Enjoy!
