  • 3 sweet potatoes, washed and halved
  • 1 tbsp melted ghee
  • 1/4 tsp red chili powder (adjust for heat)
  • pinch of salt
  • 8oz feta block
  • 1 1/2 tbsp sour cream
  • zest of 1 lemon
  • black pepper to taste
  • toppings: hot honey, cilantro, sliced green onions, crushed toasted coriander seeds, pomegranate seeds, lime juice, chili powder, finishing salt

Instructions

  1. Preheat your oven to 425°F.
  2. Arrange sweet potatoes on an unlined baking sheet.
  3. Combine melted ghee, red chili powder, and salt, then brush over the sweet potatoes, placing them cut-side down.
  4. Cover the pan tightly with foil and bake for around 20 minutes.
  5. After 20 minutes, uncover and flip the sweet potatoes. Bake uncovered for another 25 minutes.
  6. Meanwhile, blend feta, sour cream, lemon zest, and black pepper in a food processor until smooth, adjusting seasoning as needed.
  7. To serve, take the sweet potatoes from the oven. Spread whipped feta on the plate, add sweet potatoes on top, then finish with your desired toppings. Season with salt and enjoy!
