Ingredients
For the cauliflower:
- 1 head cauliflower
- 1/4 cup extra virgin olive oil
- 1 teaspoon kosher salt
For the chimichurri:
- 1 cup cilantro
- 1 cup parsley
- 1 clove garlic
- 2 tablespoons preserved lemon (rind only), chopped
- 1 1/2 cups extra virgin olive oil
- 1/2 cup white wine vinegar
- 1/2 cup of currants soaked in water (soak in hot water for 30 minutes and strain)
- 1/2 teaspoon kosher salt
For the tahini:
- 1 cup raw tahini
- 1 grated garlic clove
- Juice of 1/2 lemon
- 1/4 to 1/2 cup ice water
- Kosher salt to taste
To garnish:
- Fried capers (rinse and dry, heat oil in a pot, and fry until golden)
- Fresh dill
Instructions
1. Preheat your oven to 450°F.
2. Cut the cauliflower into florets, coating them with olive oil and kosher salt. Roast for 15 to 17 minutes, until golden brown.
3. For the chimichurri, blend cilantro, parsley, garlic, and preserved lemon. Gradually add the olive oil, then mix in the currants and vinegar once blended.
4. Prepare the tahini sauce in a bowl, then spread it on a serving dish.
5. Top the tahini with the roasted cauliflower, drizzle with chimichurri, and finish with fried capers and fresh dill.
