Recently, I've embraced a more instinctive way of eating, focusing on what my body genuinely craves rather than just health or convenience. It involves being aware of when I'm hungry or full, which helps me enjoy meals while feeling my best. On Sunday nights, my body consistently craves a delightful avocado toast topped with roasted tomatoes and a soft-boiled egg.

This meal is a quick solution that takes roughly five minutes to prepare.
Imagine this: the weekend is winding down, you're trying to fend off the Sunday blues with a warm bath or your favorite self-care routine, and you're all set for a new episode of your favorite show. What could be more comforting than warm toast piled high with delicious toppings? I can't think of anything better.
Having the ingredients on hand makes it easy to resist the temptation of ordering takeout. In fact, I bet you can whip this up faster than it takes to browse a menu and place an order!
At first glance, these toasts might seem simple, but a few key elements elevate them. First, getting the eggs just right is crucial. I recommend boiling them for eight minutes for a perfectly jammy yolk that's not overly runny.


Here's how to achieve egg perfection:
Bring a saucepan of water to a boil, gently add your egg(s), and set a timer for eight minutes. Once done, transfer the egg to ice water until cool, then peel while running it under warm water to warm it back up. It's all about that perfection.
The next upgrade for your avocado toast is blistered tomatoes. Simply toss cherry tomatoes in a hot skillet for a few minutes until they start to burst. While you could use raw tomatoes, these blistered gems create a flavorful sauce that enhances the entire toast.

Lastly, don't overlook the Everything Spice blend that brings a delightful garlicky, oniony flavor! I particularly enjoy the one from Trader Joe's, but many stores now carry their own versions.

Ingredients
- 4 slices of seeded bread (my favorite is Dave's Killer Bread 21 Grains & Seeds Thin Sliced – just 60 calories per slice and full of fiber and protein)
- 1 ripe avocado
- 12 cherry tomatoes, halved
- 2 soft or medium-boiled eggs (see above for my method)
- Toppings: Everything Spice (I use this one), fresh cilantro, sriracha, lime wedges
Instructions
- Toast the bread in a toaster or under a broiler.
- Peel the avocado, discard the pit, and slice it.
- Heat a small skillet to high, then toss the cherry tomatoes until softened. Season with salt and set aside.
- Spread avocado slices on the toast, gently mashing them down. Peel the eggs and slice them on top.
- Add the blistered tomatoes, sprinkle with Everything Spice, fresh cilantro, and your choice of sriracha or hot sauce. Finish with a dash of sea salt, slice in half, and enjoy. Don't forget napkins!
