2 large sweet potatoes, cleaned
2 tablespoons honey
2 tablespoons unsalted butter
1 clove garlic, minced

Cooking Instructions
- Preheat your oven to 400°F. Puncture each sweet potato multiple times and wrap them in foil. Place on a rimmed baking sheet lined with foil and roast until fork-tender, about 60-70 minutes. Let them cool slightly before handling.
- Switch the oven to broil. In a saucepan, mix butter, honey, and garlic over low heat until the butter melts. Remove from heat and stir in the berbere seasoning and a pinch of salt.
- Slice the sweet potatoes diagonally into thirds, then arrange them cut side up in a baking dish. Lightly mash with a fork, drizzle with the honey butter mixture, and broil until edges are golden and crisp.
- Top with fresh herbs and enjoy!
