Guacamole has been a favorite for as long as avocados have been enjoyed. At its core, it's simply mashed with a molcajete y tejolote (Mexican mortar and pestle). Keeping it simple is essential for crafting the best guacamole.
After gaining experience in prestigious kitchens worldwide, chef Virgilio Martínez returned to Peru in 2009 to establish Central. Since 2013, Central has been featured on the World's 50 Best list and has repeatedly earned the title of the top restaurant in Latin America. Recently, he released The Latin American Cookbook with Phaidon Press.
