Ingredients

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 sticks cold unsalted butter, diced
  • 1/4 cup sugar
  • 1/4 cup finely chopped pecans
  • 5 tbsp ice-cold water

For the filling:

  • 2/3 cup brown sugar
  • 6 tbsp all-purpose flour
  • 1 tsp kosher salt
  • 1 1/2 cups corn syrup
  • 4 eggs
  • 1 tbsp bourbon or whiskey
  • 1 1/2 cups chopped pecans
  • 4 ounces bittersweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F. Line a 13 x 9″ baking dish with parchment paper and spray the sides with nonstick spray.
  2. For the crust: In a bowl using a stand mixer or hand mixer, combine flour, butter, and sugar. Mix on medium until it resembles coarse crumbs. Incorporate the chopped pecans and ice-cold water until the mixture holds together.
  3. Press the crust mixture evenly into the bottom of the prepared baking dish. Bake for 18-20 minutes or until the edges turn a light golden brown.
  4. For the filling: In a large bowl, whisk together brown sugar, flour, and salt until well combined. Add corn syrup, eggs, and bourbon, mixing thoroughly. Fold in pecans and chocolate. Spread the filling evenly over the crust and bake for 30-35 minutes, until set when slightly jiggled.
