Our editor enjoys putting together her lunches instead of whipping up new dishes every day. “Craft meals from pre-prepped ingredients: pick a protein (like rotisserie chicken or baked tofu), a carb (such as roasted sweet potatoes or hearty bread), some veggies (like spinach), and a healthy fat (think avocado). Mix and match to keep it exciting,” she suggests.

Bowl lunches are fantastic for the workplace. If you prep ingredients in advance, you can toss them together effortlessly. She recommends preparing roasted veggies, hard-boiled eggs, and rice ahead of time. “This way, you can create your own mini salad bar at home,” she adds. So fun!

A snack-style lunch is essentially a portable charcuterie board, enhanced with extra proteins and fresh produce. Think of it as an adult version of Lunchables. “Aim for colorful snacks; for example, red tomatoes, green edamame, and orange carrots,” she suggests. If you find this style appealing, invest in divided containers to keep your snacks organized.
